So, my partner and i are on a bit of a health kick at the moment. I'm on it in a bid to get back down to my ideal weight which i feel most comfortable at and to also try and kick my habit of snacking to the curb. I don't eat anything massively unhealthy but i do like to purge on chocolate.
I've decided to focus my priorities on eating more healthy and introducing more exercise to lifestyle. I have been doing meal plans for through the week as i feel i'm stuck in a bit of a food rut so to speak. Upon doing my healthy eating research i came across this beauty of a meal consisting of a "Chilli, Lime and Prawn Pasta Salad." I'm a huge fan of salads and of pasta so this is right up my street. The recipie is as follows:
Ingredients
200g pasta
200g cooked, peeled prawns
2 large tomatoes, chopped
1 small red onion, chopped
3 tablespoons chopped fresh coriander
For The Dressing
1.5 tablespoons olive oil
Zest and juice of 1 lime
1 red chilli, deseeded and chopped
Pinch of caster sugar
Freshly ground black pepper
Cooking Instruction
Cook the pasta in boiling water for 8-10 minutes according to packet instructions or until al dente
Drain in a colander, then rinse in cold water until just cold and drain again
Place the prawns, tomatoes, onion and corriander in a large bowls
Whisk all the dressing ingredients together, season to taste, and pour over the vegetables in the bowl
Drain the pasta, add to the bowl with the other ingredients
Toss well and serve
This recipie is enough to serve two people and contains 594 calories per serving. I'd recommend this recipie to all, the flavours and textures are so refreshing and it leaves you feeling pleasantly full and satisfied. I was a bit thrown back at first when reading the recipie as you dont have to cook any of the ingredients bar the pasta but, in the end, it was definiately a technique i will certainly be repeating as the dish was fantastic and ticked all of the right boxes for me.
